According to the Merck Manual Online Medical Library, Celiac disease, also known as Celiac sprue, is an inherited condition in which an individual cannot tolerate a protein found in wheat, oats or barley called gluten. Individuals with an intolerance to gluten will experience changes in their small intestine. These intestinal changes occur after repeated inflammation takes place whenever an individual with Celiac disease ingests gluten protein. Changes in in the small intestine can cause a problem with the way an individual's body absorbs the nutrients within ingested food. Malabsorption of nutrients is a major problem with Celiac disease and there are a number of symptoms that may point to malabsorption.

Malabsorption of Fat

    The gastrointestinal symptoms of Celiac disease are often caused by the malabsorption of fats. Symptoms of the malabsorption of fat include diarrhea, gas that is very odorous, bloating of the abdomen and fat deposits in stool, causing fecal matter to appear light in color and to float.

Malabsorption of Lactose

    Celiac disease can cause a decrease in the number of villi in the small intestine. Without these villi, the small intestine is less able to absorb glucose and galactose that are found in the milk sugar lactose. Symptoms of the malabsorption of lactose include diarrhea, excessive gas, bloating and a distended stomach.

Unusual Weight Loss

    Celiac disease can cause a malabsorption of carbohydrates, proteins and fats. This can cause individuals suffering from the condition to lose weight without changing their eating habits.

Fluid Retention

    When a human body is unable to absorb protein properly, there is not enough protein in the blood and more fluid enters the tissues of the body, particularly in the legs and ankles. Fluid retention is a symptom of malabsorption in individuals with Celiac disease.

Blood Problems

    Individuals with Celiac disease do not absorb vitamins K and B12 or iron properly. This leads to anemia, bruising and problems with the blood not being able to clot properly.

Muscle Weakness

    Individuals with Celiac disease may experience muscle weakness. This is often the result of the malabsorption of potassium.
